  • 1 pound beef stew meat cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 4 cloves garlic minced
  • 8 cups beef broth
  • 1 cup brown or green lentils rinsed
  • 1 (14.5 ounce) can diced tomatoes undrained
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 1 bay leaf bay leaf
  • Salt and pepper to taste
  • chopped fresh parsley for garnish (optional)

Method
 

  1. Brown beef in olive oil, season with salt and pepper. Remove and set aside.
  2. Cook onion, carrots, and celery until softened. Add garlic and cook until fragrant.
  3. Pour in beef broth and scrape up browned bits.
  4. Add lentils, diced tomatoes, thyme, rosemary, and bay leaf.
  5. Return beef to pot. Bring to a boil, then simmer for 1 1/2 to 2 hours, or until beef is tender.
  6. Remove bay leaf. Season with salt and pepper to taste.
  7. Garnish with parsley, if desired. Serve hot.

Notes

For a richer flavor, use homemade beef broth. You can also add other vegetables like potatoes or turnips.
