Method
- Brown beef in olive oil, season with salt and pepper. Remove and set aside.
- Cook onion, carrots, and celery until softened. Add garlic and cook until fragrant.
- Pour in beef broth and scrape up browned bits.
- Add lentils, diced tomatoes, thyme, rosemary, and bay leaf.
- Return beef to pot. Bring to a boil, then simmer for 1 1/2 to 2 hours, or until beef is tender.
- Remove bay leaf. Season with salt and pepper to taste.
- Garnish with parsley, if desired. Serve hot.
Notes
For a richer flavor, use homemade beef broth. You can also add other vegetables like potatoes or turnips.
