Method
- Heat olive oil in a pot over medium heat. Add onions, garlic, carrots, and celery. Cook for 4-5 minutes until softened.
- Add tomatoes, lentils, broth, cumin, coriander, and paprika. Stir to combine.
- Bring to a boil, then simmer uncovered for 30 minutes until lentils are tender. Blend for a creamier texture.
- Stir in spinach and lemon juice. Let wilt. Add salt to taste before serving.
Notes
For a richer flavor, use homemade vegetable broth. You can also add a dollop of plain yogurt or sour cream before serving.
