  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 medium carrots peeled and chopped
  • 2 celery ribs celery ribs chopped
  • 3 cups baby spinach sliced into ribbons (or kale)
  • 2 cups dry green or brown lentils
  • 7 cups vegetable broth
  • 14 ounce crushed or diced tomatoes
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt or to taste
  • 1 lemon lemon juiced (about 2 tablespoons)

Method
 

  1. Heat olive oil in a pot over medium heat. Add onions, garlic, carrots, and celery. Cook for 4-5 minutes until softened.
  2. Add tomatoes, lentils, broth, cumin, coriander, and paprika. Stir to combine.
  3. Bring to a boil, then simmer uncovered for 30 minutes until lentils are tender. Blend for a creamier texture.
  4. Stir in spinach and lemon juice. Let wilt. Add salt to taste before serving.

Notes

For a richer flavor, use homemade vegetable broth. You can also add a dollop of plain yogurt or sour cream before serving.
