Method
- Rinse lentils, remove debris, and drain.
- Dice pepper and onion. Slice carrots and mince garlic.
- Add vegetables and canned tomatoes to crock pot.
- Cut ham into cubes and add to crock pot.
- Add bay leaves, pepper, and salt to crock pot.
- Pour chicken broth into crock pot and stir.
- Cook on low for 8-10 hours until lentils are tender.
- Serve with bread or crackers.
- Makes 8+ servings.
