Ingredients
  

Soup Base
  • 3-4 cups leftover/cooked chicken shredded or chopped
  • 4 ribs celery chopped
  • 3 carrots chopped
  • 1 onion chopped
  • 3 cloves garlic minced
  • 6-8 cups chicken broth
  • ½ tablespoon Worcestershire sauce
  • ½ teaspoon each dried rosemary, thyme, and dried sage
  • Salt and pepper to taste
  • 2 small bay leaves
For Finishing
  • 1 cup uncooked white rice

Method
 

  1. Add the cooked chicken, celery, carrots, onions, and garlic to your crockpot.
  2. Pour in the chicken broth, then stir in the Worcestershire sauce, dried herbs, salt, pepper, and bay leaves.
  3. Cover and cook on low for 5–7 hours or high for 3–4 hours, until the veggies are tender and flavors have come together.
  4. During the last hour of cooking, stir in the uncooked rice, then cover and continue cooking until the rice is tender.
  5. Before serving, give it a good stir and top with fresh parsley or any other herbs you love.

Notes

For an extra layer of flavor, consider browning the vegetables lightly before adding them to the crockpot, or garnish with fresh dill or chives.
