Method
- Rinse lentils. Dice carrots, celery, onion, and mince garlic.
- Add all ingredients to the slow cooker.
- Stir to combine, adding more liquid if needed.
- Cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- Season and serve. Blend for smoother consistency if desired.
Notes
For a richer flavor, sauté the vegetables before adding them to the crockpot.
