  • 1.5 cups dried brown or green lentils rinsed and picked over
  • 4 cups vegetable broth
  • 15 ounces diced tomatoes undrained
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • to taste Salt
  • to taste Freshly ground black pepper

Method
 

  1. Rinse lentils. Dice carrots, celery, onion, and mince garlic.
  2. Add all ingredients to the slow cooker.
  3. Stir to combine, adding more liquid if needed.
  4. Cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  5. Season and serve. Blend for smoother consistency if desired.

Notes

For a richer flavor, sauté the vegetables before adding them to the crockpot.
