Method
- Heat oil in a pot over medium heat. Add onion and cook for 1 minute. Stir in garlic and carrots and cook for 2-3 minutes.
- Add tomato paste, tomato sauce, and lentils and cook for 1 minute. Stir in potatoes and pour in 4 cups of water.
- Season with salt, pepper, thyme, and oregano. Cover, bring to a boil, then reduce heat. Simmer for 25-35 minutes.
- Taste the soup and add more salt and pepper if needed. Serve warm.
- Taste and adjust the seasoning if needed. Serve warm.
Notes
For a richer flavor, use vegetable stock instead of water. You can also add other vegetables like celery or spinach.
