Method
- Sauté onion, carrots, and celery in olive oil. Stir in tomato paste and cook for 2-3 minutes.
- Add garlic, Italian seasoning, paprika, cumin, bay leaves, and black pepper. Sauté for 1 minute.
- Add lentils, crushed tomatoes, vegetable broth, and water. Simmer for 20-30 minutes, adding more water if needed.
- Remove bay leaves. Stir in lemon juice and adjust seasoning.
- Garnish with parsley and serve.
Notes
For a richer flavor, use homemade vegetable broth. You can also add other vegetables like potatoes or spinach.
