  • 3 tablespoons olive oil
  • 1 medium onion diced
  • 1 medium carrot diced
  • 2 ribs celery diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 bay leaf
  • 2 cups dried brown lentils or green lentils; rinsed
  • 1 (14-ounce) can diced tomatoes
  • 6-7 cups vegetable broth or chicken broth
  • 2 cups chopped kale or spinach
  • 3-4 tablespoons fresh lemon juice
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a pot over medium heat. Cook onions, carrots, celery, and garlic until softened, 5-6 minutes.
  2. Add cumin, coriander, and bay leaf. Cook for 1 minute until fragrant.
  3. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then simmer uncovered for 30–35 minutes, or until lentils are tender.
  4. Remove the bay leaf. Stir in the kale and simmer for 3 more minutes until wilted. Season with lemon juice, salt, and pepper.
  5. Serve immediately. Enjoy!

Notes

For a thicker soup, blend a portion of the soup before adding the kale.
