  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 6 cloves garlic finely chopped or minced
  • 3 carrots finely chopped
  • 3 cup celery stalks finely chopped
  • 2 teaspoons salt
  • 1 pound lentils picked and rinsed
  • 1 (15-ounces) can diced tomatoes
  • 6 cups chicken or vegetable broth plus more if needed
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground all-spice
  • 1/4 teaspoon ground ginger
  • 1/2 lemon Juice from 1/2 lemon ((about 2 teaspoons))

Method
 

  1. Heat the oil in a large pot over medium heat.
  2. Add onions, garlic, carrots, and celery; sauté until onions are translucent (5-6 minutes).
  3. Add lentils, tomatoes, broth, coriander, cumin, black pepper, all spice, and ginger; bring to a boil.
  4. Reduce heat, cover, and simmer for 30-35 minutes, or until lentils are tender. Season with salt and pepper. Stir in lemon juice.
  5. Blend some soup for creaminess. Return to pot. Add broth if needed.

Notes

For a richer flavor, use homemade broth. You can also add a bay leaf during simmering and remove it before serving.
