- Heat the oil in a large pot over medium heat.
- Add onions, garlic, carrots, and celery; sauté until onions are translucent (5-6 minutes).
- Add lentils, tomatoes, broth, coriander, cumin, black pepper, all spice, and ginger; bring to a boil.
- Reduce heat, cover, and simmer for 30-35 minutes, or until lentils are tender. Season with salt and pepper. Stir in lemon juice.
- Blend some soup for creaminess. Return to pot. Add broth if needed.
Notes
For a richer flavor, use homemade broth. You can also add a bay leaf during simmering and remove it before serving.
