Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add garlic, thyme, and smoked paprika and cook for 1 minute more, until fragrant.
- Stir in lentils, vegetable broth, diced tomatoes, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- Remove bay leaf. Season with salt and pepper to taste.
- Stir in lemon juice (if using).
- Serve hot.
Notes
For a richer flavor, use homemade vegetable broth. You can also add a dollop of plain yogurt or a sprinkle of fresh parsley before serving.
