Ingredients
  

Meatballs
  • 1 lb lean ground beef
  • 1/2 cup plain bread crumbs
  • 1 large egg
  • 2 Tbsp. fresh dill or parsley chopped
  • 1 tsp. Italian seasoning
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • salt and black pepper to taste
Soup
  • 2 Tbsp. olive oil
  • 1 medium onion chopped
  • 2 medium carrots shredded
  • 2 garlic cloves minced
  • 2 cups tomato sauce
  • 8 cups chicken broth or water
  • 1 cup red lentils
  • salt and black pepper to taste

Method
 

  1. Mix meatball ingredients in a bowl and shape into mini meatballs. Set aside.
  2. Heat oil in a pot, add onion and carrots, and cook for 5-6 minutes. Add garlic and cook for 1 minute.
  3. Add tomato sauce and broth or water. Bring to a boil.
  4. Add lentils, meatballs, salt, and pepper. Simmer uncovered for 15-20 minutes until soup is thick and meatballs are cooked.
  5. Serve topped with parsley or dill.

Notes

For a vegetarian option, omit the meatballs and use vegetable broth.
