Method
- Mix meatball ingredients in a bowl and shape into mini meatballs. Set aside.
- Heat oil in a pot, add onion and carrots, and cook for 5-6 minutes. Add garlic and cook for 1 minute.
- Add tomato sauce and broth or water. Bring to a boil.
- Add lentils, meatballs, salt, and pepper. Simmer uncovered for 15-20 minutes until soup is thick and meatballs are cooked.
- Serve topped with parsley or dill.
Notes
For a vegetarian option, omit the meatballs and use vegetable broth.
