Ingredients
  

Soup Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 large onion chopped
  • 2 carrots chopped
  • 1 rib celery chopped
  • 3 cloves garlic minced or grated
  • 1 teaspoon ground cumin
  • 2 tablespoons tomato paste
  • 2 medium potatoes peeled and cut into small pieces
  • 8 cups vegetable broth add 4 cups at a time if your pot is not big enough
  • 2 cups split red lentils dried not canned
  • 1.5 teaspoons salt
  • 2 twists black pepper
Garnish
  • 1 lemon cut into wedges
  • 1 handful flat-leaf parsley chopped
  • pita bread
Chili Oil
  • chili oil made with 1 clove garlic, 1 teaspoon red pepper flakes, and 4 tablespoons olive oil

Method
 

  1. Heat olive oil in a large pot. Sauté onion, carrots, and celery for 4 minutes.
  2. Add garlic, cumin, and tomato paste, and fry for one minute.
  3. Add potatoes, vegetable broth, and rinsed lentils.
  4. Season with salt and pepper and simmer for 15-20 minutes.
  5. Blend until smooth and adjust salt.
  6. Serve with lemon juice, parsley, and chili oil. Make chili oil by warming olive oil, red pepper flakes, and garlic.
  7. Serve with warm pita bread.

Notes

For a richer flavor, use chicken broth instead of vegetable broth. You can also add a pinch of red pepper flakes directly to the soup for extra heat.
